Ingredients (Serves 10)

  • 1 tablespoon vegetable oil
  • 2 cups gluten-free oats (quick cooking or old fashioned)
  • 2 large eggs
  • ½ cup almond milk
  • 1 cup plain 2% Greek yogurt
  • ⅓ cup maple syrup
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon almond extract
  • 1/4 teaspoon iodized salt
  • 8 ounces Wyman’s Fresh Frozen Triple Berry Blend
  • 1/3 cup each almond meal, rolled oats, and sliced toasted almonds
  • 4 ounces Wyman’s Fresh Frozen Triple Berry Blend
  • 1/4 cup packed light brown sugar
  • ½ teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup cold unsalted butter, diced into ½-inch cubes

Directions

  1. Preheat oven to 350 degrees.
  2. Use a paper towel to lightly grease a skillet or 9×9 baking dish with vegetable oil.
  3. Place all cake ingredients except the fruit in a blender or a food processor fitted with the steel blade (oats, eggs, almond milk, Greek yogurt, maple syrup, baking powder, baking soda, almond extract, and salt). Blend or process on high, stopping to scrape down and stir the ingredients as needed until the batter is smooth and the oats have broken down almost completely. Set aside.
  4. In a separate bowl, mix together all the ingredients for the crumble except the butter and the berries. Then add the butter and work it into the dry ingredients with your hands, squeezing until it turns into crumbles. Stir in the fruit and set aside.
  5. Pour a little more than half of the batter into the skillet. Sprinkle on the berries, then pour on the rest of the batter. Top evenly with the crumble.
  6. Bake for 45-50 minutes or until a toothpick comes out smooth.

Note: For the crumble topping, if you do not need a gluten-free cake then you can substitute all-purpose or wheat flour for the almond meal.


 

 Lemon “Cream” With Fresh Raspberries

Enjoy this healthy, creamy, lemon-tofu dessert with fresh raspberries. It’s easy to make with only a few easily found ingredients.

Ingredients (Serves 4)

  • 4 teaspoons grated lemon zest, divided use
  • 1/4 cup fresh lemon juice
  • 1/2 cup plus 2 tsp agave nectar or honey, divided use
  • 1 package (12 ounces) silken tofu, firm or extra-firm, drained*
  • 2 cups fresh raspberries

Directions

  1. Combine 3 tsp (1 tbsp) of the lemon zest, lemon juice, 1/2 cup agave nectar, and tofu in a blender. Purée until smooth, scraping down sides of blender with rubber spatula as necessary.
  2. In a small bowl, mash 1 cup of the raspberries with the remaining 2 teaspoons agave nectar. Gently mix in the remaining raspberries.
  3. Divide 2/3 of the lemon cream evenly among four bowls or serving glasses. Spoon raspberry mixture over cream, then top with the remaining 1/3 of the cream and sprinkle with remaining 1 tsp lemon zest.


 

Chocolate Blueberry Cream Pie

A beautifully rich and creamy raw dessert pie full of nutrition and flavor. Decorate before serving with edible flowers like borage.

Ingredients (Serves 12)

Crust:

  • 2 cups coconut flakes
  • 50 grams cacao beans, or paste
  • 3 tablespoons honey
  • 2 tablespoons coconut oil
  • 1 teaspoon maca powder
  • 1/4 teaspoon real salt
  • 1 vanilla bean, deseeded

Chocolate Filling:

  • 100 grams cacao paste (stone ground cacao beans)
  • 1/2 cup raw cashews, or cashew butter
  • 1/2 cup filtered water
  • 1/4 cup maple or palm sugar
  • 1/2 cup blueberries
  • 1 teaspoon maca powder
  • 4 tablespoons honey
  • 2 tablespoons coconut oil
  • pinch real salt
  • Blueberry Filling:
  • 1/2 cup blueberries
  • 1/2 cup raw cashews or butter
  • 4 tablespoons honey
  • pinch real salt
  • 2 tablespoons coconut butter or oil
  • 1 vanilla bean, deseeded

Directions

  1. Pulse 50g cacao paste or beans in a food processor until broken into small pieces.
  2. Pulse all crust ingredients in a food processor until combined and sticky, press into pie plate and chill.
  3. Melt 100g cacao paste, in a dehydrator or over a double boiler.
  4. If using cashew nuts, blend cashew with 1/2 cup filtered water until creamy.
  5. Blend all chocolate filling ingredients until smooth in a high power blender. Pour into pie crust. Chill.
  6. Blend all blueberry filling ingredients in a high power blender until smooth. Pour over chocolate filling. Chill 2 hours or more and decorate.


 

Sugar-Free Frozen Dessert

Ingredients (Serves 4)

  • 1 1/2 cups buttermilk
  • 8 slices pineapple
  • 8 tablespoons juice (no sugar added)
  • 5 teaspoons sugar substitute

Directions

  1. Blend together in a blender till smooth. Freeze into 4 portions.

Ingredients

  • 1 cup black mission figs
  • 1/2 cup walnuts
  • 1 medium avocado
  • 3 tablespoons unfiltered honey
  • 1/2 vanilla bean
  • pinch of grated fresh nutmeg
  • 1/4 teaspoon salt

Directions

  1. Slice figs into quarters.
  2. Spoon out avocado into a blender along with all remaining ingredients.
  3. Blend on medium speed until creamy, using a tamper or spatula if necessary.
  4. Serve with fresh slices of figs and crushed walnut pieces.
