It is then put into a water bath and heated to a precise temperature. Because of the low temperature of the water bath, cooking takes a long time. Flavor, moisture, and nutrients stay in the food.

The Gourmia Sous Vide & Multi-Cooker sous vide mode preset temperature is 130°F with a range of 115-205°F and preset time is 8 hours with a range of 30min-72 hours. The thickness of the meat, poultry, and fish determines the length of cooking time.

The slow cooking mode preset temperature is 212°F, unadjustable. Preset time is 6 hours with a range of 4-12 hours. Slow cooked foods retain moisture in the pot, so only a little liquid is needed. The connective tissue in cuts of meat with high-fat content breaks down during slow cooking, making the meat tender. Thus the best cuts for slow cooking are pot roasts, chuck steak or roast, cross-rib roasts or ribs.

This mixes and softens aromatic vegetables like onions, garlic, carrots, and herbs. Sear meat in order to build flavor by caramelizing the outside before slow cooking.

Preset sauté mode temperature is 390°F with a range of 375-425°F. The preset time is 10 minutes with a range of 5 minutes to 2 hours. Wow, hope you never have to sauté for that long!

Roasting

Presets are a temperature of 355°F with a range of 300-425°F and time of 1 hour with a range of 30 minutes to 3 hours.

To make gravy, use the Sauté mode after the roast has been removed to heat the liquid in the removable cooking pot. Stir in a mixture of water and 1-2 Tbsp of cornstarch or flour to thicken. Stir and heat for 5 minutes adding any seasonings you like.

Throw it all in the removable cooking pot, season with salt, pepper, herbs, and spice to your taste. Then push the stew mode button and walk away until its done.

Stewing mode has a non-adjustable preset temperature of 188°F and adjustable time of 2-4 hours preset to 2 hours.

Steaming

Put 2-inches or more of water in the cooking pot for efficient steaming at the preset temperature and time. For more than 30 minutes steaming, add water until it reaches the top of the rack or bottom of the cooking dish.

The preset temperature for steaming is 212°F non-adjustable. Preset time is 30 minutes, adjustable between 20 to 90 minutes.

Bake high-density food such as cheesecake at a lower temperature to prevent burning the bottom before the top of the food is cooked. The adjustable temperature range is 230-420°F.

    A very detailed review on the Gourmia multi cooker. I’m looking out to buy a christmas present for my aunt. Multi cooker seems a good choice & I’ve been reading many reviews now. What quantity of food can you cook in this cooker? Is it possible to cook multiple dishes?

      The capacity of the Gourmia GMC680 Multi-Cooker with Sous Vide is 6L (6.5 Quarts). You can roast a whole chicken or make stew for 7 – 8 hungry adults.
