The Gourmia GMC680 11 in 1 Sous Vide & Multi Cooker with LCD Pedestal Display, Multiple Cooking Options is a very versatile cooking appliance. With its many pre-programmed settings as well as manual mode, it cooks everything needed for a complete meal from soup to dessert.
The pedestal features easy to use controls and bright blue LCD time and temperature display. Pre-programmed cooking modes take care of most common cooking tasks automatically. You can customize the programs by adjusting cooking time and temperature. There are also manual and keep warm modes.
No longer will you be sweating over the stove top or watching the oven contents to avoid a burned dinner. Cook everything to gourmet standards that your family and friends will rave over with just one appliance.

Cooking by sous vide, French for under vacuum, was invented in 1799. It was revived in the mid-1960s and was accepted by prominent chefs in France during the mid-1970s. Food is prepared, put in plastic bags which are sealed after the air has been removed from inside the bag. The food can then be stored refrigerated or frozen until ready to be cooked. It is then put into a water bath and heated to a precise temperature. Because of the low temperature of the water bath, cooking takes a long time. Flavor, moisture, and nutrients stay in the food.

The slow cooking mode preset temperature is 212°F, unadjustable. Preset time is 6 hours with a range of 4-12 hours. Slow cooked foods retain moisture in the pot, so only a little liquid is needed. The connective tissue in cuts of meat with high-fat content breaks down during slow cooking, making the meat tender. Thus the best cuts for slow cooking are pot roasts, chuck steak or roast, cross-rib roasts or ribs.
