Size

The Gourmia GSV138 Sous Vide Pod Immersion Cooker is compact. But don’t let the size fool you. It is capable of circulating 1.5 gallons of water per minute through a full 360° in any heat-safe container of up to 5 gallons capacity.

Power

1200 Watts power the heating element and circulating pump. The unit operates at precision regulated temperatures up to 203°F (95°C).

Controls

A top of the handle houses the control panel with LCD display and touch sensitive power “ON/OFF” button and “SET” button. Lower down on the handle is the variable time & temperature wheel. 

Handle/Clamp

Attached to the handle is a clamp that allows you to easily attach the unit to any shape of container for continuous hands-free operation.

Below the handle is the stainless steel heating sleeve containing the heating element and water circulator. Marks on the sleeve indicate the minimum and maximum immersion levels. 

Functionality and Performance

The Gourmia GSV138 Sous Vide Pod Immersion Cooker is easy to use and keeps water at a constant temperature throughout the long time periods necessary for Sous Vide cooking. The active thermostat is accurate to +/- 0.1 degree.

For example, to Sous Vide cook a beef steak or filet to medium doneness it must be cooked at 140°F (60°C) for 1 hour. A Prime Rib roast takes 6-14 hours at 140°F (60°C) (depending on weight).

After cooking meat Sous Vide sear all sides in a hot skillet when done and top with butter.

Cooking time can be set from 00:00 to 59:59 hours. When the timer counts down to the set time, the alarm will beep every three seconds. You must turn off the cooker when cooking is complete to avoid going past your desired doneness, i.e. rare, medium, well done, etc.

Patience is a well-rewarded virtue for the Sous Vide cook. The results are worth the wait.

Having said that, this is a very powerful Sous Vide cooker. The 1200-watts heated 1.6 gallons (6 liters) of water up from 75°F (23.9°C)to 135°F (57.2°C) in just over 13 minutes. Other Sous Vide cookers in the same price range took 24 minutes.

  2. I’ve never used a sous vide pod immersion cooker before. The Gourmia GSV138 is an interesting example. You wrote that it is similar to a slow cooker and takes time. Does the food end up with a similar consistency as a slow cooker? I find slow cooker food has a more tender, fall apart texture to it. Would I get the same result with a sous vide pod immersion cooker?

      The consistency or doneness of the food depends on your taste. Steak can be done rare, medium, well-done or anywhere in between. If you want tender, fall off the bone ribs, you can do that as well.

      The differences between slow cooking and sous vide are:

      1 – Slow cooking allows moisture to evaporate, it is an open to atmosphere process, whereas sous vide is cooking “under vacuum” so that all the moisture, flavor, and aroma stays in the food.

      2 – Slow cooking does not have the precise temperature control as that of sous vide. Sous vide cooking thus results in more precise and consistent results. If you want your steak medium-rare, it is medium-rare edge to edge, not just on the inside. And every time you cook sous vide with the same temperature for the same amount of time, and the same amount of ingredients, the results will always be exactly the same. Try that with a slow cooker.

      3 – Sous vide allows a larger variety of dishes to be cooked than slow cooking, for example, eggs and creme brulee.

      Although I mentioned that sous vide is a slow process, because it is done at lower temperatures than stove top or oven cooking, delicate foods can be cooked in a short time. Vegetables, for example, can be cooked in a relatively short time to retain their crispness.

      I am not criticising slow cooking. It is also a tasty and convenient way to cook, especially one-pot style meals. Each cooking method has its place in the kitchen. The beauty of sous vide is the high-quality, even, and consistent results.
