Slow Cooker Chicken Recipes

Chicken is such a versatile ingredient, it works with almost any kind of dish. Soup, Appetizer, Main or Side, American, Indian, Mexican, Asian, Fusion, Mild, Spicy or anything in between. Here are some great slow cooker chicken recipes that you and your family are sure to love.

Chicken Cassoulet

Beforehand, prepare the beans when you have time. While you are waiting for them to cook, portion all the other ingredients. Then on the morning of your planned meal, pop everything in the slow cooker so it will be ready in time for you to enjoy for dinner.

Ingredients (Serves 4)

  • cup dry navy beans
  • pound chicken pieces with skin removed
  • cup reduced-sodium tomato juice
  • cup chopped celery
  • 1 garlic clove minced
  • cup sliced carrots
  • cup chopped onion
  • 1 bay leaf
  • teaspoon dried basil crushed
  • teaspoon dried oregano crushed
  • 1 teaspoon instant beef bouillon granules
  • teaspoon dried sage crushed
  • teaspoon paprika


  1. Rinse beans. In a medium saucepan, mix beans and 2 cups water. Bring to boiling. Boil uncovered for 10 minutes Drain. Add 2 cups more water. Return to boiling. Reduce heat, cover, simmer about 1 1/2 hours until beans are tender. Drain. Cover and chill.
  2. In electric slow cooker, combine beans, chicken pieces, tomato, celery, carrots, onion, garlic, bay leaf, bouillon, basil, oregano, sage, and paprika. Cover. Cook on LOW  8 to 10 hours. Remove and discard bay leaf.

Slow Cooked Whole Chicken

Easy to cook, but very tasty and tender. No prep needed and only a few ingredients commonly found in your kitchen.

(Serves 4-6 depending on size of hen or roast)

  • 1 Whole Baking Hen or Roasting Chicken
  • Salt and Pepper to taste
  • 1 tsp thyme
  • 1 TBS butter – melted (optional)
  • Garnish with lemon slices and rosemary


  1. Remove Hen from packaging and rinse well. Pat dry with paper towels. Salt and pepper the inside of the cavity and the outside very well. Sprinkle Thyme over the chicken.
  2. Place the chicken in the slow cooker – I like to put it in with breasts facing up – but that is up to you – either way will work.
  3. Place the lid on the slow cooker and turn on low. Do not disturb for at least 8 hours. That’s it, don’t add water, don’t add anything. The chicken will be done when you get home.
  4. When you arrive home 8 hours later – a little longer is no big deal – the chicken is ready.
  5. (Optional step) Your slow cooker will not turn the skin of the chicken brown. Only do this if you like it brown and a little crispier than the crockpot will make it. Turn the broiler on in your oven. Gently lift the chicken out of the crockpot with two large wooden spoons and place it gently in a cast iron skillet. Gently. Don’t worry that its wings and legs fall off. Paint the melted butter onto the exposed skin. Place under the broiler for 3-5 minutes until golden brown. Garnish. Serve.

Poblano Corn Chowder with Chicken and Chorizo

Two-step corn chowder with a little heat. Just what you need. Prepared the night before, popped in the slow cooker in the morning and ready for you and your family after a hard day of playing outside in the cold.

Ingredients (Serves 8)

  • 4 cups Swanson® Chicken Broth (Regular, Natural Goodness® or Certified Organic)
  • 1 tablespoon sugar
  • 2 cans (about 14.5 ounces each) cream-style corn
  • 1 large potato, diced (about 2 cups)
  • 2 large poblano chiles, seeded and diced (about 2 cups)
  • 1 package (10 ounces) frozen whole kernel corn, thawed
  • 1 pound skinless, boneless chicken breasts and/or thighs, cut into cubes
  • 1/2 pound chorizo sausage, diced
  • 1 cup heavy cream
  • 1/4 cup chopped fresh cilantro leaves


  1. Stir the broth, sugar, canned corn, potato, chiles, thawed corn, chicken and sausage in a 6-quart slow cooker.
  2. Cover and cook on LOW for 7 to 8 hours* or until the chicken is cooked through. Stir in the cream and cilantro.

Chicken Breasts

Turn bland, ordinary chicken breasts into a flavorful, wholesome delight. Instructions below are for preparation the night before. Otherwise, just go straight from skillet to slow cooker.

Ingredients (Serves 4)

  • 4 chicken breasts
  • Salt to taste
  • Freshly-ground black pepper to taste
  • Creole seasoning
  • 2 tablespoons butter
  • 1 medium onion sliced
  • 1 teaspoon Italian seasoning
  • cup chicken broth – (to ½ cup)
  • cup dry sherry
  • 1 can mushrooms – (4 oz) drained, (optional)


  1. Rinse chicken and pat dry. Season with salt, pepper and Creole seasoning. In a skillet, melt butter and quickly brown chicken. Do not overcook. Remove chicken and put in a container in the refrigerator.
  2. Saute onions and mushrooms in the drippings in the skillet. Add sherry and chicken broth to the skillet and stir. Sprinkle with Italian seasoning. Remove from the skillet and put in a separate container in the refrigerator. Keep the sauce and chicken in separate containers to prevent cross-contamination.
  3. In the morning, if the chicken has been refrigerated, place chicken in a preheated slow cooker. If you the chicken and sauce are coming straight from the skillet, preheating is not necessary. Pour the sauce over the chicken. Cover. Cook in the slow cooker on LOW 8 to 10 hours or on HIGH 3 to 4 hours.
  4. Serve over fluffy rice.

Simple Slow Cooker Pho

Vietnamese Pho is such a tasty dish and this Simple Slow Cooker Pho makes it so easy to enjoy this tasty dish at home. Packed with chicken, shrimp and spiced up with jalapeños and Sriracha, forget takeout … cook this dish yourself.


  • 3 chicken breasts (skinless/boneless)
  • 8 cups chicken stock
  • 2 tbsp. brown sugar
  • 2 tbsp. fish sauce
  • 1 tbsp. tamari sauce
  • 1 cinnamon stick
  • 10-star anise
  • 1 2-3 inch piece of fresh ginger (peeled and sliced)
  • 6 whole cloves
  • 3/4 pound frozen cooked shrimp (thawed/tail on)
  • 8 baby bok choy (chopped)
  • Thai basil leaves (roughly chopped)
  • 1-2 jalapenos (sliced)
  • 1 lime (quartered)
  • Sriracha sauce (as needed)
  • Pad Thai noodles (precooked)
  • Fresh bean sprouts (raw or blanched)


  1. Place chicken breasts in slow cooker
  2. Combine stock, fish sauce, cinnamon, star anise, ginger, cloves, tamari, and brown sugar
  3. Pour over chicken breasts
  4. Cook on low for 9 hours
  5. Roughly chop bok choy
  6. Rinse and dry shrimp
  7. Remove chicken breasts from slow cooker along with spices
  8. Add bok choy and shrimp to pot
  9. Replace lid, turn slow cooker to high and cook for 30 minutes
  10. In the meantime, shred cooked chicken breasts
  11. Return shredded chicken to pot and heat for a few minutes
  12. Place noodles in bowls, ladle broth, garnish with jalapenos, basil, Sriracha and bean sprouts
