What Is Sous Vide Cooking?

  1. I really like the anova 900 watt sous cooker. Don’t get me wrong because the other sous vide machines seems good too. I specifically like the 900 watt one because it seems to be just right for my family size. We have four people in the family afterall. I like the sous vide machines in a sense that it can help precook meats, especially the really thick ones. This helps evenly heat up the meat without burning the exterior or losing the “juicyness” of the meat. There is one major concern that I have though. The ziploc bag you used to heat up the meat seems to be a special kind, because these kinds of bags are normally not heat resistant. Does purchasing a sous vide machine comes with bags included. Assuming that the bag is included, how many times can I reuse a bag? Or do you feel that it is not sanitary to reuse a bag? I mean, I can always scrub it with some dish washing liquid then rinse it with hot water. What do you think?

      Use Zip-Loc Freezer bags, they are thicker and tougher than regular resealable bags. And yes you can reuse them simply by washing them under the tap with soap and hot water. Do not use bulk plastic/cling wrap made from polyvinyl chloride or polyvinylidene chloride as these may contain harmful plasticizers (to make them more flexible). These chemicals are known to leach into fatty foods such as cheese or meat.

      If you are really concerned, and you needn’t be, Amazon and other sources supply sous vide reusable bags specifically designed for the application. 

      Hope you enjoy sous vide cooking, it really is a step above conventional cooking methods and well worth the extra time.
